Instant Pot Venison Spanish Rice

Instant Pot Venison Spanish Rice is the perfect weeknight meal. Ingredients: – ground venison – taco seasoning – pork lard (or other cooking fat) – butter – yellow onion – long grain rice – fideo pasta – stock or broth – crushed tomatoes – chili powder – ground cumin – garlic powder – dried oregano – salt – shredded cheese (optional) – sour cream (optional)

Mix taco seasoning into ground venison.

Cook meat with the sauté function in the Instant Pot.

Remove the meat and cook the onions, rice, and fideo pasta in butter until slightly browned.

Add tomatoes, stock, remaining seasonings, and cooked meat. Stir to combine.

Place the lid on top of the Instant Pot and lock it into the sealed position. Move the steam release valve to the closed position. Select the rice mode and let the Instant Pot come to pressure and cook. When cooking is done, quick release the Instant Pot by releasing the steam release valve. When pressure is fully released, remove the lid.

Fluff the rice with a spoon or fork.

Top with shredded cheese and serve with sour cream, if desired. Enjoy!
