A delectable combination of sweet and salty honey soy glaze, infused with classic Asian flavors such as fresh ginger and sesame, beautifully caramelizes on flaky cod filets.
Combine all glaze ingredients (soy sauce, honey, sesame oil, rice vinegar, garlic, ginger, and sesame seeds) in a small bowl.
Place the cod filets in a glass dish. Pat dry with a paper towel.
Brush 1 tablespoon of the glaze over the cod filets. Cover and refrigerate for 30 minutes - 2 hours. Reserve the remaining glaze for cooking.
Set the oven to low broil and position a rack in the center. Line a sheet pan with parchment paper or aluminum foil. If your broiler runs hotter than 450°F, use aluminum foil instead of parchment to help prevent burning.
Place the cod filets on the lined sheet pan and brush with glaze.
Broil on low for 12-14 minutes, brushing with glaze every 2-3 minutes, or until you run out of glaze. You can continue brushing the filets with the glaze on the pan as well.
Turn the broiler on to high and broil for 4-5 more minutes, or until the outside is browned and the internal temperature reaches 135-140°F.
Transfer the filets to a serving plate. Garnish with green onions. Enjoy!
Notes
Cod can be replaced with other white-fleshed fish like halibut, rockfish (or sea bass), black cod, lingcod, haddock, etc.
For a citrusy twist on this recipe, you can replace the rice vinegar with lime juice.
Honey adds a distinct flavor to the glaze, but you can use brown sugar or maple syrup instead.
Green onions are an optional garnish for the fish. You can also add fresh cilantro for an extra pop of flavor and color.
This recipe uses an oven with a broiler. The fish can also be cooked in a skillet on the stove or on a plank on the grill.
To add some extra flavor, you can double the glaze recipe and reduce it in a small saucepan to serve alongside the fish.
