Ground Venison  Italian Sausage

Venison Italian Sausage is a staple in most hunters' freezers. But most of the time it's not homemade. Let's change that! Sausage seasonings are so easy to make and you can adjust the ingredients and quantities to suit your palate. Plus, you can make small batches instead of committing to having a freezer full of one type of sausage. Sound like a plan? Let's get to it!

Ingredients: – Ground Venison – Red Wine Vinegar – Salt – Black Pepper – Dried Parsley – Garlic Powder – Onion Powder – Dried Basil – Paprika – Red Pepper Flakes – Ground Fennel – Brown Sugar – Dried Oregano – Dried Thyme – Lard (optional, for cooking)

Mix all spices and herbs together in small bowl.

Add spice mixture and red wine vinegar to ground meat.

Mix seasonings into meat by hand until well-combined. Refrigerate for at least a few hours, preferably overnight to let the flavors marry.

Cook and enjoy on its own or as an ingredient for pastas, pizzas, you name it!

Seasoning can be stored in larger batches in a glass jar for future use.
